Quick Breakfast Treats

Here I simply made oval shaped pancakes about palm size and added pan sausage maple flavor, cheese, and scrambled eggs which you can add syrup or jelly. This is a great quick breakfast treat that can be prepared the night before or early morning and helps save time and money while you commute to your daily routines.

I labled these panny muffins because they are pancake muffins stuffed with your choice: scrambled eggs, bacon, pan sausage, mini pepperonis, honey, and fruit. Mix pancake mix, spray muffin pan, add about 2 tablespoons of pancake mix then drop your choice of stuffings and bake until golden brown.

TASTY ONE DISH MEAL AND QUICK OF COURSE


Okra, Sausage, Stewed Tomatoes served with white rice

This is a great yummy and tasty one dish meal that can be prepared all in the matter of 30 minutes tops. It has a great flavor combined with fresh garlic, can stewed tomatoes (quick version), diced yellow onions, bag of cut okra and sautee' really good follow up with a slice of garlic bread and its a great one dish "QUICK" meal. Now you can also include some baked chicken and corn to make it a hearty meal. Here is what you need:

1 bag of cut frozen okra
1c diced yellow onions
2tbsp minced garlic
1can of stewed tomatoes (preferrably cajun style)
1can 8oz tomato sauce
2c of sliced sausage
1/3c of oil
seasonings
2c rice cooked
2quart pot
large round skillet


Heat your skillet to med (sorry but I cook on a electric stove)  and add oil, when hot add onions, garlic, and sausage. Cook until onion are clear and sausage is brown, so lets say about 10 minutes, then add okra and seasoning to stir and saute' until not so creamy. Cook another 10 minutes stirring and add tomato sauce, can of  stewed tomato, and a little more seasoning to taste because the acidity from tomato will over power your seasonings you've already added. Now let cook another 10 minutes on about med and allow to cool down then serve over rice and include slice of garlic bread. Enjoy!

QUICK CHICKEN CHEESY PASTA

This titled quick chicken cheesy pasta! I came up with this creation on a whim after getting home from work and was terribly hungry to say the least. I searched the cabinets, fridge and freezer and quickly put this together without a recipe. It took about a matter of 30 minutes total to prepare and cook. I was very hungry because I allowed myself to be at work the entire day and not have any thing to eat. Now this pasta dish was quick, easy to prepare, and took no time to cook and it would have gone well with a side salad and maybe some garlic bread, but since it was late did not want to eat too heavy of a meal and soon retire for a good slumber of sleep. The picture above is with cheese and the one below it what it will look like if you don't want any cheese. Ingredients include, chicken strips or tenderloins, olive oil, seasoning, shell pasta, and can/jar(your selection of tomato sauce), garlic, and some italian herb spices or parsley flakes.

2c of chicken tenderloins cut up and dice in chunks
2tbsp of olive oil
2c of your choice tomato sauce(i used a 32oz can of hunt's with chunky mushrooms)
1/3c cooking wine vinegar
16oz bag of shell past
2tsp parsley flakes or italian herb
1 clove of garlic
salt/pepper to taste
water

Boil water to include 1tsp of olive oil, and when rapid bowl add pasta. In a bowl add diced chicken, vinegar, parsley flakes, and seasoning. Let sit for about few seconds, then heat skillet with 1 tsp of olive oil and add chicken, cook until tender and white. Then add pasta sauce diced of clove of garlic, let cook for about 15min then add shell pasta to tomato sauce mix and little more seasoning because the acid from the tomatoes will quickly take over and simply taste like tomato sauce, so adding additional seasoning will not give it a salty taste. Stir and allow to cook for about 10 minutes and then if you want while its cooking toast your garlic bread and mix salad together and add pasta, sprinkle some sharp cheddar cheese on top or not and enjoy!

MEATLESS TACO SALAD

So I came home from work today and it was so hot that I was like I don't feel like cooking let alone standing in the kitchen for a long period of time to prepare a meal. So I quickly looked into the fridge and found lettuce, tomato, cucumber, black olives, and cheddar cheese that I cut up into strips (improvised, since I didn't have shredded), and mild banana salad peppers. 




So if you its just for yourself or for several prepare your salad as you normally would and include the veggies and this is so quick and very filling too. Now I sprinkled some cumin on it to give it some flavor. Also you can add some sour cream, salsa, and meat if you choose but this was a great salad that can be prepared really FAST. This salad is also great for those wanting to lose weight and eat healthy portioned meals. Enjoy!

LATE NIGHT SNACKING

Hi!

So I decided to tell you about late night snacking. What I prepared today was some watermelon coolers and attempted to also include fruit smoothies but it took so long with the watermelon coolers, I think we will save for tomorrow. I came up with this idea to stop eating heavy rich creamy foods that will add on unwanted pounds even though you know you're gonna get up in the morning and do an good workout. Although it still doesn't hurt to get what those taste buds long for. Let's call it a cheat snack! I'm gonna provide you with recipes that I create myself and others that I find in my favorite magazines. So some of the recipes will be very a source to help you with weight loss or weight management.That's why I came up with tonight's cool creation.

So you will need to get a seedless watermelon, and put your creativity together when you cut it, i suggest triangle pyramids but dont cut it too pointy at the top because you will need to cut about 1/4 off the top and scoop the middle out about two so that you can add your filling. Fillings can be a yogurt, jello, or to be really creative add some of the watermelon extra pieces (the cut off tops or what is salvageable from the watermelon itself and crush it adds a fruit juice (your choice, me I tried V8 berry medley), some crushed pineapples, and freeze it just a little bit and then add to the center and top with some diced apples, red and green grapes and its just another similar version to a fruit bowl but a little different.

Now the fruit smoothies I do have the recipe that I found In magazine First for Women and I will include it below, now it calls for whey protein so if your gonna serve this to children omit this item.
In a blender, combine 1c frozen raspberries, 1/2 cup diced seedless watermelon, 1/4 c pomegranate juice and 1scoop of whey protein or substitute yogurt. Puree 30 sec. or until smooth. Sweeten with honey to taste, if desired.

Tues Nite BBQ

So since its still such awesome weather outside (kinda hot) I thought it would be great to get outside and put some meat on the grill and whip up some baked potato salad (sounds yummy doesn't it) and try some veggies on the grill. Yeah its my first time not sure how well the kiddos are gonna feel about it but, I can always put out ole faithful, green salad of course. Now I have this new citrus vinaigrette I purchased and another Pomergranite vinaigrette so I will marinate my steaks in some of the pomegranite vinaigrette, oh y0u didnt think I was gonna put that citrus on the beef oh no no no! I just wanted to tell you about it. Now I will boil about 6 hand size potatoes (red) since they are a smaller potato and once they are soft in the middle  peel the skin and now for the quick additives, seasoning (salt, pepper), bacon bits (real bacon) shredded cheddar cheese, and green onions, ranch  dressing, and sour cream. put that to the side and head to the grill. Now my steak have marinated and I will now put them on the grill and include some yellow/zucchini squash until done and SERVE!
 As always quick-fix cooking and later I'll play the wii with the kids. Until next time.

seasonings I always use pepper and cajun seasoning
6 red potatoes
1c sharp shredded cheddar cheese
1c sour cream
1 small pkg hidden valley ranch dressing mix (powder)
1c real bacon bits
1/3c green onion

GOOD MORNING ALL!

How was your weekend? Mine was awesome! I had a great forecast and spent some quality time with the kiddos. Most of all took some time to honor the memory of the 10 year 9/11 annivesary and really realizing what is most important in my life right now. It made me sit back and think since the attack on our FREEDOM nation what significant changes have I made since then. So I'm putting forth more effort to achieve and excel in set goals for my life that not only will impact my life, my children's lives but my community as well. So if you didn't take that moment of silence to REMEMBER then do so now.

Anyway I dont want to get too personal sound like a therapist, but today's breakfast break included (healthier) a small bowl of oatmeal, three oz of fruit (now you can include that in your oatmeal if you want, I didn't) only 1 cup of coffee and for my snack later it will be a peanut butter/nutella half sandwich with milk. I will get back to you on lunch and dinner. So as always providing you QUICK meals that don't take up too much of your time.
