How was your weekend? Mine was awesome! I had a great forecast and spent some quality time with the kiddos. Most of all took some time to honor the memory of the 10 year 9/11 annivesary and really realizing what is most important in my life right now. It made me sit back and think since the attack on our FREEDOM nation what significant changes have I made since then. So I'm putting forth more effort to achieve and excel in set goals for my life that not only will impact my life, my children's lives but my community as well. So if you didn't take that moment of silence to REMEMBER then do so now.<br />

Anyway I dont want to get too personal sound like a therapist, but today's breakfast break included (healthier) a small bowl of oatmeal, three oz of fruit (now you can include that in your oatmeal if you want, I didn't) only 1 cup of coffee and for my snack later it will be a peanut butter/nutella half sandwich with milk. I will get back to you on lunch and dinner. So as always providing you QUICK meals that don't take up too much of your time.<br />

<br />
Marinated Chicken Strip salad<br />
<br />
2c chicken tenderloins<br />
2c sherry vinegar or the real thing<br />
5c salad mix romaine, butter, iceberg<br />
now if you do a bag mix it will come with other veggies as well<br />
1c of shredded carrots<br />
1/4c shredded cheddar cheese<br />
1c cherry tomato<br />
1/4c sliced cucumbers<br />
1c croutons<br />
choice of dressing (mine will be pomergranite walnut vinaigrette by Ken's)<br />
seasoning<br />
<br />
Rinse tenderloins and set in a bowl then add sherry vinegar set for about 2hrs ahead of time if possible, but if not just kinda roll them around in the sherry and seasoning. Cook tenderloins until done and then dice in chunks. Add salad mix to bowl or separate plates then sprinkle chicken, top with cheese, and croutons.<br />
Now you can also toast some bread-sticks, garlic bread, or croissant rolls. All day I thought about a quickie i could create that wouldn't take too much time and allow us to either spend time out or for some get to bible study on time and enjoy when you get home. Ground Turkey meat soft tacos, or Fish Tacos, sounds good, Yeah! Ok so ground some turkey meat easily $2-$5 bucks, get some soft flour tortillas(not corn), lettuce, tomatoes, grilled onions(optional) or red sweet onions, avocados, limes, pkg of spanish style rice, and canned charro beans. quick and easy. Now you can omit the beans if you think it will be too heavy on you if you desire to eat when you get home or if you don't wanna be gassy when you're out and about. The limes are for you to squeeze on on your tortillas or when you've prepared your tacos. Good, and enjoy!<br />

Sorry i havent been on in awhile, but today i have come up with a quick breakfast, good nutrition meal for us busy parents to prepare for those that have to grab and go. Prepare eggs scrambled, cook up some bacon, now you can prepare these the night before or in the morning if you have time, pancakes. Now make your pancakes big enough to roll up a scoop of eggs and 2 slices of bacon, and sprinkle some cheese. Talk about yummy, and the kids will love them too. 12oz pkg of Vermicelli pasta<br />
4oz of chicken (cubed or tenderloins) uncooked<br />
1cup of snap peas and carrots mix<br />
1 pkg of broccoli cauliflower carrots mix<br />
seasonings<br />
2 shakes of hot seasame oil<br />
1/3 cup of olive oil<br />
1/3 cup of soy sauce<br />
Heat skillet and add all oils, chicken, and seasonings. Boil pasta in another pot n when done set aside, do not drain. Now when chicken is done add vegggies and just a few dashes of soy sauce as well and some garlic. Then you want to add pasta to chicken and begin to stir and mix together, now at this point jus get a lil taste to make sure you dont need to add anything like seasoning if so just a lil on top and stir once more. then let simmer foar about 5min. voila!Then go for it, enjoy.<br />

So for my morning wakeup call to get the blood flowing to the brain, I prepared my morning coffee and quick bite of toasted bread n dash of honey to get motivated. Sorry guys, yes I enjoy a cup of caffeine, working on changing that though! So brainstorming on what to prepare for lunch, and I thought that since weather man says it will be in the triple digits again, that a nice cold prepared salad sounds good. So I purchased a prepared romaine salad pkg from the store (prepared salad fixins comes in handy) which has carrots and so on. I have a really good raspberry walnut vinaigrette and sauteed some chicken tenderloins with mild seasonings, diced after cooking and sprinkled some pkg shredded cheddar cheese, not sure how that's gonna appeal to the tongue palate, but gonna give it a try. Also included some cubed cucumber and diced tomatoes. Oh I cant wait to get to it. Well hope this was helpful too. Let you know later how it tasted.<br />

Now this is so quick and affordable as well!<br />
1 pkg of angel hair pasta<br />
2 pieces of garlic from the clove (can subsitute garlic seasoning 3 shakes)<br />
1 cup of diced yellow/white onion<br />
1jar of Alfredo sauce (i use great value from walmart)<br />
seasoning to your taste<br />
2 cups of peeled/deveined uncooked/cooked shrimp<br />
note: if cooked then it kinda takes away that seafood taste because of them being frozen, but can always <br />
sautee' em in butter before adding to pot<br />
optional: may add spinach, broccoli, or chicken<br />
<br />
boil pasta until done add oil while boiling to keep from sticking, when done include vegetables(onions/garlic), seasoning, sauce, allow to cook for about 10-15mins then add seafood. If adding any of additional options always add before seafood, you dont want to overcook your shrimp. Now you can make a salad, garlic bread/buttery croissants to make a quick meal. Talk about yummy, then have time to read a book, play a game, any quality family activity.<br />

This was a first for us to have at home anyway, so I seasoned my ground meat (sorry can't share) prepared some sauteed onions, slice avocado, lettuce, cheese and seasoned fries. Mouth is still watering! But none the less it only took a short time to prepare with the kids helping(yeah) and were able to sit enjoy at a reasonable time so kids could still be prepared for bed and begin another day of the new school year. Get it and feel the regrets later, saying (ooh! I should've cooked today) So do you ever look at a dish that you order a restraunt and wonder if you could prepare that yourself? I do all the time, only wish I had the time to do just that.<br />My mom recently told me about a recipe that a nice elderly lady mentioned to her about "cakkies", and I thought what the world is that. Then she went on to explain that its a cookie made from cake mix, which is shorter in preparation and not too sweet or too hard.
